Spelt is an ancient variety of wheat that often contains a lower gluten content, and a higher protein than most of today's wheat varieties. While still holding much of the same nutrients, spelt is a great source of iron, magnesium and zinc, and it also holds more of a sweet, nutty flavour than you might expect.
Spelt berries are also great to keep on hand for fresh milling as needed. Generally speaking, spelt is a hard grain with enough protein to build the gluten needed for yeast breads and sourdough. Yet it also responds similar to a soft grain, with a beautiful moisture content for quick breads like muffins or pancakes. With a sweeter flavour that your typical wheat, spelt is a lovely addition to add versatility in your pantry.
