Banana Nut Muffins

This delicious recipe works with any kind of flour - we've made it with many different types and it always comes out amazingly! 

INGREDIENTS:

  • 2 cups (500ml) mashed banana 
  • 1/2 cup (125ml) butter, melted
  • 2 cups (500ml) flour
  • 1/2 cup (125ml) sugar
  • 1 1/2 tsp. (7ml) baking powder
  • 1 tsp. (5ml) baking soda
  • 1/2 tsp. (2ml) salt
  • 1 cup (250ml) chopped pecans OR chocolate chips

DIRECTIONS:

  1. In a large bowl, mix the banana and butter together.
  2. In a separate bowl, combine the dry ingredients and nuts. Fold into the banana mixture until just combined.
  3. Fill 12 greased muffin cups. Bake at 400 °F (200°C) for 20 minutes. Turn out onto a rack to cool. 

Makes 12 large muffins.
