
Banana Nut Muffins
This delicious recipe works with any kind of flour - we've made it with many different types and it always comes out amazingly!
INGREDIENTS:
- 2 cups (500ml) mashed banana
- 1/2 cup (125ml) butter, melted
- 2 cups (500ml) flour
- 1/2 cup (125ml) sugar
- 1 1/2 tsp. (7ml) baking powder
- 1 tsp. (5ml) baking soda
- 1/2 tsp. (2ml) salt
- 1 cup (250ml) chopped pecans OR chocolate chips
DIRECTIONS:
- In a large bowl, mix the banana and butter together.
- In a separate bowl, combine the dry ingredients and nuts. Fold into the banana mixture until just combined.
- Fill 12 greased muffin cups. Bake at 400 °F (200°C) for 20 minutes. Turn out onto a rack to cool.
Makes 12 large muffins.
