Strawberry Rhubarb Pie Filling with @rudiejo
Every season @rudiejo has beautiful recipe cards for her orders and this past summer’s recipe was a delicious Strawberry Rhubarb Pie. We used our freshly milled soft white wheat flour and it performs beautifully for pastries like pie crust! INGREDIENTS:
- 1/3 cup plus 1/2 cup brown sugar
- 1/3 cup white sugar
- 1/4 cup cornstarch
- 1/4 tsp salt
- 1 Tbsp orange juice
- 1/2 tsp vanilla extract
- 3 cups rhubarb, chopped
- 3/4 cup strawberries, chopped
- 3/4 cup fresh milled soft white wheat flour
- 1/2 cup fresh raw rolled oats
- 1/2 cup cold butter
DIRECTIONS:
Strawberry Rhubarb Pie Filling
In a large bowl, stir together ⅓ cup brown sugar, white sugar, cornstarch, salt, orange juice, vanilla, rhubarb and strawberries.
Crumble Topping
Combine flour, ½ cup brown sugar, oats and butter until crumbly.
Fill pie crust with fruit mixture and top with crumble. Bake at 400°F for 20 minutes, then 350°F for 30-35 minutes.
Cool on rack and enjoy!
