Ingredients

3 C warm water

1/2 C sugar

6 Tbsp oil

1 tsp salt

2 Tbsp instant yeast

2 beaten eggs

3 cups whole grain spelt flour

Directions:

Combine together until well blended.

Add 4-6 C sifted hard white wheat flour - just enough to make a soft dough. Knead 5-8 minutes to encourage gluten formation. The dough should not be sticky but elastic and smooth to touch.

Cover and let rise for one hour or until double in size. Punch down, and divide into 24 equal pieces. Shape each piece of dough into a ball and place on a greased baking sheet. Cover and let rise one hour.
Preheat oven to 350F

Bake buns uncovered for 20 minutes or until golden brown on top. Cool on a cooling rack.

Variations:
Try stuffing these buns with ham and cheese, pepperoni and pizza sauce, or spinach and feta for a fun lunch idea. When shaping the dough into buns, simply spread out each piece of dough and place 2 TBSP of whatever mixture you choose into the center, folding the dough back up around the filling and pinching it together to hold its form. Place the pinched side down to be the bottom of the bun, and let rise as per the recipe. Allow an extra 10-20 minutes longer baking time as needed.
