Cranberry Granola
Delicious Cranberry Granola makes a great start to any day. It also doubles as a nutritious, filling snack anytime! Pour some in a bowl and enjoy with fresh milk, or delight in the crunch all on its own as a quick bite between meals.
INGREDIENTS:
- 1/4 cup oil
- 1/2 cup brown sugar
- 1/2 cup honey
- 1/2 tsp cinnamon
- 3 cup rolled oats
- 1 cup chopped almonds
- 1/4 cup ground flax
- 1/4 cup sunflower seeds
- 1 cup dried cranberries
DIRECTIONS:
- Preheat oven to 350°F.
- Heat oil, brown sugar and honey in a saucepan over medium heat until sugar is dissolved, then stir in cinnamon.
- In a large bowl, combine oats, almonds, flax and sunflower seeds, then add oil mixture. Stir well.
- Spread in a shallow parchment-lined baking dish and bake 20 minutes.
- Stir in cranberries and bake 10 more minutes or until lightly browned. Mixture will firm as it cools. Break into chunks and serve or store cooled.
